Family Food: My Favorite Gluten Free Flourless Brownie Recipes

Brownie Recipe #1 Date Brownies

When we were all on the GAPS diet I came up with this simple recipe for brownies. Even though we have reintroduced gluten free grains and starches, I still love this recipe and use it often. It is flourless, gluten and grain free, oil free, what else, soy free, dairy free, I think that’s all the frees. All you need to make it work is a vitamix. If you don’t have one and use another high powered blender or food processor it will work, just not be as smooth.

In this order place ingredients in your vitamix:

12 eggs
1/2 cup raw honey
1/2 cup cocoa powder
1&1/2 tsp. baking soda
1 tsp. salt
68 dates (we buy organic dates at Costco, even though it says they are pitted you still have to check for pits as they miss some and a pit will have to be strained out of the batch. Not fun. I just thoroughly squeeze each date with my fingers while putting them in to check)

Blend all of this on the highest setting until smooth, maybe a couple of minutes. You may or may not have to use the tamper. Pour into a greased pan (coconut oil, or organic butter) Bake at 350 degrees for maybe 30 min. I just check to see when it doesn't jiggle. You can also, if you want, scatter some chocolate chips over the top before baking. But of course would need to make your own if you are strictly grain free because of sugar. I did this in this picture. I also used a 15x11 pan for both brownies. These are moist and cakey.

Brownie #2 is from a Chocolate Covered Katie recipe.
My husband and I are trying to eat lower carb lately, not perfectly keto, but at least no refined sugars. I like this recipe because, really so simple, and easily adjustable to your eating needs. I only add monk fruit sweetener, no honey or refined sugars. And in place of protein powder (if I am out) I have added collagen powder or just more cocoa powder like she suggests. I quadruple this recipe so as to make plenty for both of us for the week. They are fudgy and filling. fudgy and filling. Say that 10 times fast. Ok, now go make some! :)
