Flourless Brownies (With Spinach shh!)

I wanted to sneak in some greens the other day into a dessert and I couldn't find a recipe with spinach in it that I liked so I figured, why not try to add spinach to this one and see how it goes. It worked out beautifully. Mainly because, they all enjoyed them, and no one knew they were eating spinach except my daughter who created this photo pin for me. So give it a whirl! But you gotta make it when no one's looking. ;)



You will need a vitamix for this or high power blender.

In a Vitamix blender add the following in order:

12 eggs
1/2 cup raw honey
1/2 cup cocoa powder 
1 &1/2 tsp. baking soda
1 tsp. salt
1&1/2  cups of fresh spinach
2 tsp. vanilla 
68 pitted dates (squeeze to make sure)

1 cup chocolate chips/chunks- 
(optional, this is to be sprinkled over pan AFTER batter is blended and poured)

Blend all above (except chocolate chips) until smooth, usually takes about 2  minutes. 
Pour into greased pan. I used an 18x13 inch pan to make a lot of small brownies but they were pretty thin. Use a smaller pan for thicker. I added chocolate chunks by sprinkling before baking. After pouring batter in pan slam it down on the counter to get any bubbles out and even it out. Bake 350 degrees about 30 min. or until it doesn't jiggle. :)

    I'm a school teacher & reading a primary school in Florida. Last few minutes reading your blog post and understand that I have to need a blender to save my time to cook and making juice for my kids. So I think I buy a blender for blend fruits juice. I was searching post about best vitamix blender but I didn't find in your blog. My request to you please mention me a post about the best and cheap blender. I hope you will do it for me.

    1. I am so sorry I missed this! I am not picky about the model but you definitely need a vitamix for this to work. if you go to their website they sell refurbished ones for a discounted price. This is how we got both of ours. We have 2 as we use them constantly and have a large family. Definitely worth the investment for me.

  3. I would not try this with anything but a vitamix. I am not picky about the model. We have 2 we purchased off their website refurbished, one is from the professional series, the other is not.
