My Go-to Homemade Mayonnaise

Unless buying your mayonnaise at a special healthfood store it is most likely made with soybean oil. Aside from the fact that I react to soy, I have read enough about its negative health affects in its most common form to want to avoid it for my family. There are healthy ways to consume soy however if you don’t have an allergy, to learn more about that read here. When I saw that I could make mayonnaise very easily in my blender, I haven’t bought it in years. So I have used several different recipes over the years and this is what I finally came up with successfully in my vitamix.


3 eggs
1/4 tsp. Dry mustard
1 tsp. Salt
1/4 cup lemon juice
2&3/4 cup olive oil 

Blend all but the oil. When blended, on a low speed (4 or 5) gradually pour oil in a steady stream 

without making a HUGE mess like seen in video...

This was a double batch I made because I have at least one child that likes a little food with his mayonnaise. I would keep this in fridge 2 weeks max. Because of eggs. Also do NOT use extra virgin olive oil. Tastes very bitter in it. Choose a very light tasting oil. Enjoy! 😊
